Ovalette:
Ovalette is a stabiliser used in baking sponge cakes. It helps the eggs to rise rapidly and stiffly. As it is acidic it also helps the beaten eggs to remain stable and not lose the airy and voluminous texture. It makes sponge cake softer and smoother.

I don't know what it is called in Germany or for that matter, the United States. I haven't found it here in the US yet, but I'm sure it must be around somewhere. I have looked on the Internet and it seems a company in Turkey makes Ovalette, so I would think it could be purchased in Europe.

Diana & Juan,
Ovalette easily accessible in Malaysia & Singapore, in major departmental store & baking supply shop. It cost ~US$2/250g.  Some name it as sponge cakes stabiliser. Phoon Huat & Company is one of the supplier.

Ovalette is also sold in southeast asia, but I don't know where else. I was sent some ovalette from a friend in Malaysia.
