Hi TP, Here are a few tips on cutting cheesecakes and cakes with buttercream frostings: 1). For perfectly clean-cut slices of cheesecakes or buttercream-frosted cakes, briefly run a thin-bladed slicing knife through an open flame, then cut. Wipe the blade and reheat between cuts. OR: 2). Run the knife under very warm water between cuts. OR: 3). Use dental floss, held very taut (this works best for cheesecake). Hope this helps TP. Diana Diana's Desserts

Hi again My desserts, especially some pies,cheesecakes and cakes with frosting, though beautiful when finished, are sometimes marred by the cutting step. They get "messed up" somewhat. I would welcome tips on slicing or cutting desserts to have a professional presentation like those in bakeries. Thanks.
