  Hi again

My desserts, especially some pies,cheesecakes and cakes with frosting, though beautiful when finished, are sometimes marred by the cutting step. They get "messed up" somewhat. I would welcome tips on slicing or cutting desserts to have a professional presentation like those in bakeries. Thanks.

  Hi TP,

Here are a few tips on cutting cheesecakes and cakes with buttercream frostings:

1). For perfectly clean-cut slices of cheesecakes or buttercream-frosted cakes, briefly run a thin-bladed slicing knife through an open flame, then cut. Wipe the blade and reheat between cuts. OR:

2). Run the knife under very warm water between cuts. OR:

3). Use dental floss, held very taut (this works best for cheesecake).
