I now have to eliminate gluten from my diet. Is there any one out there who is experienced with gluten free baking? I would love some advice about a good mixture of gluten free flours to use for cakes (or for various kinds of cakes if one needs to alter the mix), AND I'd love to know if it's at all possible to make puff pastry without gluten, and if so, how?
