Hi,

This is Diana from Diana's Desserts website.

I have a question. Where do you place your rack in the oven when, for instance, when you're baking the cornbread?

If it's getting to brown or burnt on the bottom, try baking it on the middle or top rack, and don't grease your pan with butter if you are having this problem. Use vegetable oil or shortening to lightly grease your pans for this purpose as butter can burn easily.

Also, I would suggest purchasing an oven thermometer. They are inexpensive and work well.

When you're going to bake something, place the oven thermometer on rack in oven, turn oven on to temperature you want to bake at, and about 10-15 minutes before baking, check to see what the oven thermometer reads. Your oven temperature may be off. So if that's the case, you can turn the temperature up alittle or down alittle depending on if the thermometer reads higher or lower than what you set your oven at.

For instance, if you preheat your oven for 400 degrees F, and place the thermometer on oven rack, and come back 15 minutes later, and the oven thermometer reads 425 or 450 degrees F, then maybe you'd want to turn your oven down to 375 or 350 degrees F.

And, of course the opposite is true, if the oven thermometer reads 375 or 350 degrees F, then you'd want to turn your oven up from 400 degrees to 425 or 450 degrees F.

Hope this helps. Please post what happens here on this Discussion Forum.

Sincerely, Diana

I would like to know how can I get foods to cook correctly in my oven at the given temp? Ex. cornbread@400 degrees (jiffy) but it seems that the bottom cooks faster and burns, and the top is still very light. Can someone please help me?   Thank You!
