In the last few weeks, I have made a couple of different quick breads, Pear Walnut and Banana Nut Bread.  Both times the loaves rose beautifully, then fell in the middle.  What would cause this to happen?  I'm not a novice baker, and can't remember ever having a cake to fall, but for some reason both these recipes sank in the middle. Both loaves were delicious but obviously less than desirable results.\
