Topic: Baking Soda

A number of recipes require baking soda, but I am one of those peoples who do not like the taste of baking soda even in small amounts. What does baking soda actually do? can one do without it in a recipe and/or use a substitute for it?

Thanks in advance.

Warmly,
Ingrid
