Book Description

French chefs are the masters of tortes and other pastries, and Italians make the world's best ice creams, but no one surpasses American cooks when it comes to making pies. Whether the flaky crust is filled with sweet summer berries, tart apples, chocolate custard, or coconut cream, almost everyone will choose a well-made pie over any other dessert.

James McNair now presents his easy, step-by-step procedures for making the perfect crust, along with thirty-five recipes for tantalizing pie fillings. Among the delicious pies are Bourbon Pecan, Coffee Crunch, Classic Lemon Meringue, Papaya Paradise, Apple Orchard, and Summer Peach, each beautifully photographed by Patricia Brabant.

This was one of the first compliments I received after making one of the pies found in this terrific book; and the compliments keep rolling in. You can't beat this book if you're looking for pie making tips. The recipes are simple and straightforward - and tasty! I have worn out my first copy already since I refer to it almost every time I make a pie.

The best pie cookbook ever written!

Wow! The previous reviewer is exactly right on every point. These recipes are awesome. The pictures are gorgeous. Everyone raves about my pie crust, which tastes and looks great! The pecan pie is especially good -- not too sweet, and the sweet potato pie is to die for. The coconut-coconut-coconut pie is my husband's favorite, but I like the summer peach pie the best. If you like to bake pies - or eat them - buy this book.

If you want to take the time to build a pie from scratch and are looking for recipes that will give you the best results, this is the book. We tried about 5 of the recipes in 3 weeks and each was better than the one before it. (I gained a quick 5 pounds during this time.) Although we didn't try some of the more exotic recipes in the book yet, we fully intend to work our way through them all. The presentation of the pie is also a highlight of the recipes. The instructions are clear and easy to follow. There's a picture with each to give you some idea of the end product. This book gets our highest recommendation.
