Hermits

Ingredients:
1 cup packed brown sugar
1/4 cup shortening
1/4 cup margarine or butter, softened
1/4 cup cold coffee
1 egg
1/2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1 3/4 cups all-purpose flour, or self-rising flour*
1 1/4 cups raisins
3/4 cup chopped nuts

Instructions:
Heat oven to 375 degrees F. Mix brown sugar, shortening, margarine, coffee, egg, baking soda, salt, cinnamon and nutmeg. Stir in remaining ingredients.

Drop dough by rounded teaspoonfuls about 2 inches apart onto ungreased cookie sheet. Bake until almost no indentation remains when touched, about 8-10 minutes. Immediately remove from cookie sheet to cooling rack. Let cool on rack completely.

*If using self-sising flour, omit baking soda and salt.

Variations:
Bran Hermits: Omit nuts. Stir in 1 1/4 cups whole bran cereal with the remaining ingredients.

Mincemeat Hermits: Stir in 1 cup mincemeat.
