California Harvest Pizza

Pimiento stuffed olives, goat cheese, roasted peppers, and marinated artichoke hearts unite, destined to land this homemade pizza at the top of your summer menu picks. Topped with a sprinkling of fresh basil and asiago cheese, it's out of the oven from start to finish in just 20 short minutes.

Ingredients:
2 (10 ounce) packages 8-inch Italian bread shells, such as Boboli
4 teaspoons olive oil
1 (6.5 ounce) jar marinated artichoke hearts, drained and quartered
1/2 cup julienned prepared roasted red bell peppers
1 (5 ounce) package goat cheese, crumbled
1 (6 ounce) jar manzanilla olives stuffed with pimiento, drained
1/4 cup grated asiago cheese
1/4 cup julienned fresh basil

Instructions:
Preheat the oven to 400 degrees F/200 degrees C. Brush each bread shell with 1 teaspoon oil. Top each shell with artichoke hearts, bell peppers, goat cheese, olives and asiago cheese, dividing equally. Place on baking sheets; bake for 8 minutes. Sprinkle each pizza with 1 tablespoon basil.

Makes 4 servings.
