Light Lemon Sherbet

Comments: A light and refreshing dessert for a warm summer's day or evening. Not too sweet and just a little bit tangy. Low in fat and carbohydrates too! |
Ingredients: 1 tbsp. (15 mL) grated lemon peel 1/2 cup (125 mL) lemon juice 3/4 cup (175 mL) orange juice 1/2 cup (125 mL) sugar 2 cups (500 mL) 2% low-fat milk Garnish: (optional) Thin slices lemon or orange peel |
Instructions: In medium size bowl, whisk lemon rind and juices with sugar until sugar is dissolved. Blend in milk. Pour into freezer container and place in freezer. Stir mixture occasionally until firm. (For longer storage, cover container). Let stand at room temperature 15 minutes to soften slightly before serving. Top each serving with thin slices of lemon or orange peel, if desired. Makes 6 servings. Per serving: 124 Calories; 3 g protein; 1.6 g fat; 25.6 g carbohydrate; 0.3 g dietary fiber. |
