Date Coconut Bars

Ingredients: 3 cups all-purpose flour 1 tsp. baking powder 5 tbsp. (a little over half a stick/2 1/2 oz./70g) butter 2 eggs 1/2 cup sugar 1/2 cup chopped dates 1/2 cup shredded dry coconut Pinch of salt 1/2 tsp. pineapple extract (optional) 4 tbsp. cornflour (or cornstarch) |
Instructions: Preheat oven to 375 degrees F/190 degrees C. Butter a cookie sheet and dust with flour. In a large mixing bowl combine butter, sugar and eggs. Cream together on medium speed. Add flour, cornflour, baking powder and salt. Mix it together, but don't over mix. Then add chopped dates, dry coconut and pineapple extract. Stir together well. Spread this thick batter on buttered and floured cookie sheet and press this equally on the sheet. Bake in preheated oven for 30 minutes. Cool on wire rack for 5 minutes. Then cut it in to squares, bars or diamond shapes, whatever shape you like. Makes 30-35 servings. |
