One of my favourite desserts Base 225g digestive biscuits 150g butter Filling 300ml milk 25g castor sugar 25g plain flour 1 1/2 teaspoons cornflour 2 eggs beaten 25g butter 100g plain chocolate 2 teaspoons brandy icing sugar 150ml double cream crush biscuits. melt butter and mix well with crumbs. press mix into base and up sides of a pie dish. place in fridge and chill for 2 hours in a large bowl blend sugar, flour, cornflour and eggs. Gently heat milk. Pour over egg mix stirring all the time. Return mix to pan, cook over a gentle heat stirring all the time until mixture thickens. Remove from heat and stir in brandy, butter and chocolate. Allow to cool slightly then pour over biscuit base. Dust with icing sugar to prevent skin forming. Refrigerate until cold. Whip cream then spread over top. Decorate with grated chocolate

How many servings does this pie make? Usually I bake pies in a 9-inch pie pan, and it makes approximately 8 servings. I will let you know when it's been posted to my site.
