Hello,

Here is a very easy and simple recipe for the pandan waffle.

Take regular waffle mix and follow the directions but replace the water with coconut milk.  Then pour in pandan extract.  I usually pour in enough to make the color light green.  Then add in coconut flakes.

Cook on waffle cooker.

It turns out just like the ones they sell at the asian stores and this recipe is quick and easy to make.

Hi Jo,

I agree, the combination of the pandan paste and other flavorings or essences or extracts might not work well, or maybe they would. It's a thing of experimenting I think. Although, I think vanilla extract might do well with the pandan flavor, but I'm not totally sure.

I don't have a waffle maker yet, so I really won't be able to try them out until I get one.

Americans usually use regular butter and maple syrup on their waffles, but your Malaysian "Kaya" sounds delcious!

   Thanks for the comments! Since I suggested to use pandan paste in the recipe, would you think adding other essence to the batter will make the waffles taste differently? I have never tried this combination. Maybe I will give it a try some time later.
   Malaysians normally take these waffles with butter, Kaya (a type of coconut flavoured spread) and peanut butter. Of course, we do accompany waffles with Maple syrup and ice-cream on classic American Waffles, like those served in A & W.
    Of course I will be grateful if you place this recipe under the Guest Recipe Book. Do you need a copy of the photo, or you will just save it from my website? If you would like a fresh one, I will sent an e-mail to you.

Hi Jo,

Your Pandan Coconut waffles look and sound delicious!

I really can't recommend anything that needs to be added for aroma or flavoring to your recipe. Maybe adding a little vanilla extract to the batter, or even lemon or orange extract (maybe 1/2 to 1 tsp.) would be nice, or even maple extract. I would suggest dusting the waffles with confectioners' sugar, and top the waffles with butter and syrup (of your choice). I would usually top waffles with Maple Syrup but with the Pandan flavor I don't know how this would taste.

Do you want me to put your recipe on my website under the Guest Recipe Book, under the Brunch Time category, or would you rather just keep the recipe on your website? Please let me know.

If I did post your recipe on my site, I would definitely suggest to guest's that they can substitute pandan extract and water for the juice from pandan leaves.
