I made these cupcakes yesterday and they taste great... However, I'd like them to be a little more lemony. I'm a fairly new baker and am a little nervous to experiment. So here's my question.. should I add lemon extract to the cake mix or maybe try a different icing, maybe a lemon icing? I don't want to over power them. Can't wait to hear yall's ideas! Laura....personally I would "experiment" with the zest from a lemon rind BEFORE I added any lemon juice at all!(I tried to check out the cupcake recipe BUT for some reason I kept getting a message that said "the page did not exist"? Anyway......try 1/2 teaspoon lemon zest to your recipe and see how that works. Not lemony enough?...then next time add 1 teaspoon/etc.! Good luck and keep us posted on the outcome, okay? Ciao!

I finally got onto your blog! I did read the lemon cupcake recipe and suggest you contact a Tupperware dealer to purchase "an egg-separator"!......lolol. Sooooooooo much easier using one of those! Was interested in your biscuits for the dogs too but adding id's for things/google, give me a "pita"!

Hi Laura, Here is a link to the lemon cake recipe I use. It is awesome! Super light and super lemony. Sometimes I drizzle hot lemon syrup over them when they come out of the oven, and they make a fantastic base for lemon meringue cupcakes. I bake the cakes, fill them with lemon curd, then top them with meringue. Give it a go and let me know how you like it! Best of luck. Lemon cupcakes
