Hi anyone has any simple and straightforward low-fat/low-carb/ low-calorie oatmeal cookies recipe to share?
Like oatmeal meringue cookies?

Hi Joanne,

Here are the 3 Low-fat, Low-Sugar recipes I have for Oatmeal type cookies:

Apple Raisin Oatmeal Cookies

26% calorie reduction from traditional recipe

Makes about 4 dozen cookies
     
Ingredients      
1-1/4 cups Equal® Spoonful*
1 cup unsweetened applesauce**
1/2 cup firmly packed brown sugar
6 tablespoons stick butter, softened
1 egg
1/3 cup 2% milk
2 teaspoons vanilla
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
1-1/2 cups quick or old-fashioned oats, uncooked
1 cup raisins
     
Notes:
*May substitute 30 packets Equal sweetener
** Apple butter may be substituted for the unsweetened applesauce

Instructions:
Combine Equal®, applesauce, brown sugar, butter, egg, milk and vanilla. Mix with electric mixer until well blended. Stir in combined flour, baking soda, cinnamon, nutmeg and salt. Gradually mix in oats and raisins until well combined. Drop by tablespoonfuls onto sprayed baking sheets. Bake in preheated 350°F oven 10 to 12 minutes or until light golden in color. Remove from baking sheet and cool completely on wire rack.
Store in airtight containers at room temperature.

Makes about 4 dozen cookies

Oatmeal Raisin Cookies

Makes 36 servings
     
Ingredients
1/2 cup stick butter, softened
3/4 cup Equal® Sugar Lite™
1 egg
1 teaspoon vanilla extract
3/4 cup all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
1-1/2 cups uncooked quick or old-fashioned oats
3/4 cup golden raisins* (see note)


Note:
*May substitute dried tart cherries or blueberries for the raisins.

Instructions:
Beat butter and Equal® Sugar Lite™ until well combined. Beat in egg and vanilla until blended. Mix in combined flour, baking soda, cinnamon and salt until blended. Stir in oats and raisins just until combined. Shape dough into 1-inch balls. Place on ungreased baking sheets about 2-inches apart. Flatten slightly with fingers. Bake in preheated 350°F oven 10 to 12 minutes or until light golden. Cool slightly on cookie sheet. Remove and cool completely on wire rack. Store in tightly covered container at room temperature.

Cooking Tip
When using Equal no-calorie sweetener, use recipes designed for Equal or maintain sweetness by adding Equal after removing the dish from heat. Prolonged cooking at high heat levels may result in some loss of sweetness.

Oatmeal Raisin Cookies

Makes about 3 dozen cookies
Ingredients
1/4 cup (4 tablespoons) margarine, softened
1-1/4 teaspoons EQUAL® Measure (5 packets) or 2 tablespoons fructose or 3 tablespoons granulated sugar
1/4 cup egg substitute or 2 egg whites
3/4 cup unsweetened applesauce
1/4 cup frozen unsweetened apple juice concentrate, thawed
1 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt (optional)
1-1/2 cups QUAKER® Oats (quick or old fashioned, uncooked)
1/3 cup raisins, chopped
       
Instructions:
Preheat oven to 350°F. Lightly spray cookie sheets with vegetable oil cooking spray. Beat together margarine and Equal® Measure until creamy. Beat in egg substitute. Add applesauce, apple juice concentrate and vanilla; beat well. Blend in combined flour, baking soda, cinnamon and salt. Stir in oats and chopped raisins. Drop by rounded teaspoonfuls onto prepared cookie sheets. Bake 15 to 17 minutes or until cookies are firm to the touch and lightly browned. Cool 1 minute on cookie sheets; remove to wire racks. Cool completely. Store in airtight container.
