I really need a tip here. I have followed a few eclair recipes, from written to youtube, and they NEVER rise. Never! What am I doing wrong? I'm already a few dozen eggs into this and have zero to show for it. Arg!!!

It isn't about how many eggs you are using.  Sounds like you are using too many already.  Try this:

1/2 cup butter
1 cup water
1 cup AP flour
1/4 tsp salt
4 large eggs - room temperature

In a pan combine butter and water. Bring to a boil, stirring until butter melts completely.

Reduce heat to low, add flour and salt. Stir vigorously until mixture leaves the sides of the pan and begins to form a stiff ball.

Remove from heat.

Add eggs, one at a time, beating well after each addition.  (This is the important part - you really have to add them 1 at a time and beat in completely).  Use a spoon and muscles - not a mixer.

Spoon out 9 shapes onto a greased or parchment-paper lined cookie sheet.

Bake at 450 for 15 minutes.  Turn down the heat to 325 and bake for 20 minutes until you hear a hollow sound when you tap them.

Remove right away to a wire rack and cool completely.  Once cool, cut off the top and scoop out the middle.  The middle you throw away.

Fill with cream or pudding and Bob's your uncle!
