Here's a recipe I put together over the weekend. I have an image on my computer now but do not know how to upload it. Any ideas?
500g new potatoes, halved.
1 roasting potato, chopped.
4 tablespoons Macadamia nut oil (if you cant find it, most nut oils will work well with this recipe)
1 Tablespoon olive oil or vegetable oil.
6 crushed Garlic cloves
Pinch of pepper & sea salt
1 teaspoon chives
Preheat your oven to gas mark 7 220 degrees Celsius.
In a large baking ray, pour in half the oil
Add in the potatoes, shaking them around to cover them evenly.
Next pour the rest of the oil over the potatoes.
Sprinkle the seasonings and garlic over the potatoes.
Shake once more to ensure even coverage.
Put them on the top shelf of the built in single electric oven for 25 minutes.
Take them out of the oven, turn over the potatoes, then scoop the oil from the bottom and cover the potatoes again.
Put back in the oven for another 25 minutes.
Make sure you keep an eye on them as they burn easily!
They are cooked when the tops & skins have turned golden brown and the middles are soft.
