I am from the UK, and am making what my recipe book calls an American Wedding Cake, which is flourless and uses ground almonds. The problem is that it is iced in a dark chocolate with unsalted butter icing, but I would like to keep the icing shiny, and I know that if often goes very dull looking. Any tips to keep it shiny please? Diana UK Diana

Try a using chocolate ganache icing instead. HTH ![]()
