Hi there! saw a friend early today and we had a discussion regarding baking chocolate cakes. She suggested adding a cup of sour cream or mayonnaise in you basic chocolate cake recipe would really help in making my cake super moist. My basic cake is quite moist but I would prefer it if it was a little bit more. Has anybody tried this? Also, would anybody know of a really good chocolate icing to use on choco cake. My usual icing needs the use of a candy thermometer. I would really want one that is more simple but not too sweet. thanks//mabelle

I have a recipe for Mocha Buttercream Frosting which would complement a chocolate cake. 2 eggs 1 1/2 cups sugar Beat together - whisk attachment Add: 3 sticks butter, softened to room temp, a little at a time. 3 TBSP cocoa 1 tsp vanilla 1 1/2 TBSP liquid coffee Continue to beat on HIGH until sugar is completely dissolved. Add a bit of whipped cream stabilizer if needed ( I usually don't need) Frosts and fills a 2 9" layer cake and is very soft and not overly sweet. Thanks for sharing, Gorta
