Topic: springform bake times

  I was wondering if any one can tell me what the cook times would be for different size springform pans.  I have only been using the 9" because I know how long to bake my cheesecake in it.  I have an 8" and one smaller 6"??? If anyone could tell me how long to bake in the smaller sizes, or, if it would be the same baking time I would REALLY appreciate it.

To answer your question about how long you should bake your 8 and 6 inch cheesecakes, I would say the rule of thumb would be to bake at 350 degrees F for 40-45 minutes for the 8-inch cheesecake, and also bake at 350 degrees F for a 6-inch cheesecake for 30-35 minutes.

Now, this is just an estimate, but to be sure that your cheesecakes are fully baked and done, the internal temperature of a "done" cheesecake should be 160-165 degrees F. You can check the temperature with an "instant read" thermometer. It will leave a small hole where you inserted it, but if you are going to top your cheescake with a topping of some sort, the topping will hide the small hole.
