I have a friend who ask me today," Why does my cakes raise in the middle and then slope down??".  I wasn't sure how to answer her.
Please help me.

Thanks

I just saw this and can't answer why the cakes dome and slope, but one way to prevent this from happening is to lower the oven temperature to 325°.  Most layer cakes call for a 350° oven, but I've found that lowering the temperature and baking for an extra 5 minutes or so ensures that the layers are moist and even.

Thanks for the reply.  I'll pass this along to my friend tomorrow.
