I just saw this and can't answer why the cakes dome and slope, but one way to prevent this from happening is to lower the oven temperature to 325°. Most layer cakes call for a 350° oven, but I've found that lowering the temperature and baking for an extra 5 minutes or so ensures that the layers are moist and even.
