Diet Coke Yeast Bread

Servings: Makes 2 loaves
Comments:
This is a wonderful and easy recipe that tastes a lot like "English Muffins", and is great plain or toasted. Everyone who has tried it, loves it!

Ingredients:
4 cups bread flour
1 tsp. salt
1 pkg. Active Dry Yeast
1/2 tsp. granulated sugar
1 (12 oz.) can Diet Coke, at room temperature

Vegetable oil, for greasing bowl

Instructions:
Combine all ingredients in a large bowl. With an electric mixer using dough hook, beat ingredients until well mixed, and dough has formed into a ball.

Place dough into a bowl that has been well oiled (placing about 1 tablespoon of oil on a paper towel, and rubbing bowl with oiled paper towel). Turn ball of dough to coat top with oil. Cover bowl with plastic wrap for approximately 1 to 1-1/2 hours, or until dough has doubled in size.

Place dough onto floured board and knead well. Shape dough into two loaves and place in oiled bread pans dusted with corn meal. Turn to oil top of loaves. Allow to rise until doubled in size (about 1 hour).

Bake at 350 degrees F (180 C) for 20 to 25 minutes, or until golden brown and bread has loosened from sides of pan.

Makes 2 loaves.
