Chocolate Zucchini Cake

Servings: 12
Particularly delicious served warm with vanilla ice cream on top.

1/2 cup (1 stick/4 oz./113g) butter
1 3/4 cups granulated sugar
1/2 cup vegetable oil
2 large eggs
1 tsp. vanilla extract
1/2 cup buttermilk
1/2 tsp. salt
2 cups all-purpose flour
4 tbsp. unsweetened cocoa
1 tsp. baking soda
2 cups grated unpeeled zucchini
1/2 cup chocolate chips
1/2 cup chopped nuts

Cream butter, sugar and oil together in a large bowl. Blend in the two eggs, the vanilla, and the buttermilk.

Add to the above ingredients, the salt, flour, cocoa, baking soda and zucchini. Mix gently.

Pour batter into a greased 9 x 13-inch cake pan. Top with chocolate chips and chopped nuts. Bake at 350 degrees F/180 degrees C for 35 minutes.

Makes 12 servings.
