75g digestive biscuits
55g caster sugar, divided
60ml whipping cream
100g cream cheese
1 tablespoon vanilla extract
Fresh Blueberries, Strawberries, Raspberries, etc.
1. Crush the digestive biscuits and mix with the melted butter and 1 tablespoon of the caster sugar. Spoon mixture into the bottom of a cheesecake tin, then refrigerate.
2. Whip cream until soft peak stage. Blend well and set aside.
3. Beat the cream cheese and remaining sugar together. Fold in whipped cream mixture and mix thoroughly.
4. Spread mixture into cheesecake tin on top of crushed biscuit mixture. Refrigerate for about 30 minutes, and then serve.
Cheesecake may be topped with fresh seasonal fruit, if desired.
Makes 6 servings.
