Flourless Chocolate Almond Cake

I was given this recipe from my aunt who is French. It's an old recipe given to her by her grandmother and it's just divine. This cake is quite rich and doesn't really need any accompaniments, although it is very nice served with whipped cream on the side. The recipe can be doubled in order to get a larger yield.


Ingredients:
4 eggs
100g (1/2 cup/3.5 oz.) caster sugar
100g (1/2 cup/4 oz.) butter
1 tsp. vanilla extract
1 tsp. baking powder
100g (3.5 oz.) ground almonds
160g (5.644 oz.) Cadbury's dark Bournville Chocolate or any good dark or semi-sweet chocolate


Instructions:
Preheat oven to 180 degrees C/350 degrees C. Grease and flour a square or round 20cm/8-inch baking tin.

Melt chocolate and butter in a bowl over a double boiler, then remove from stove and let cool.

Whisk eggs and vanilla extract until light and fluffy. Simply fold in ground almonds, sugar, baking powder and lastly mix in melted chocolate and butter mixture.

Pour mixture into prepared baking tin and bake in preheated oven for 40 to 50 minutes. Let cool on wire rack before serving. Serve with whipped cream, if desired.

Makes 6-8 servings.
