Fruit and Nut Oatmeal Cookies

These cookies are such a hit at our house. I've made 2 batches in 2 days. Can't keep up with the demand. I scoop all my cookies out in a 1/4 cup measuring cup dipped in sugar.


Ingredients:
1 cup (2 sticks/8 oz./226g) butter, softened
3/4 cup brown sugar
1/2 cup granulated sugar
2 eggs
1 1/2 cups all-purpose flour
1 tsp. vanilla
1 tsp. baking soda
1 tsp. ground cinnamon
1 tsp. ground nutmeg
1/4 tsp. salt
1 cup dried cranberries
1 cup raisins
1/2 cup chopped nuts
3 cups oatmeal


Instructions:
Preheat oven to 375 degrees F/190 degrees C.

With an electric mixer blend butter and sugars well. Add vanilla, baking soda, spices and salt. Mix well. Alternate beating in flour and eggs. Mix in oatmeal, fruit and nuts by hand. Blend thoroughly.

Using a 1/4 cup measuring cup dipped in sugar, scoop out cookie dough and place on cookie sheet, then level each cookie. You can get 9 cookies on a tray nicely.

Bake in preheated oven for 9 to 12 minutes. Let cookies stand for 2 minutes on cookie sheet before moving to cooling rack. Keep them in an airtight container for safe keeping. But they won't last long. Enjoy!

Makes 15 cookies.
