Authentic Witches Fingers

Servings: 30-60 depending on size of fingers

Witches Fingers are a delicious pecan short bread cookie decorated to look like a real chopped off and bloody finger. They look great and taste even better!


Ingredients:
1 cup (2 sticks/8 oz./226g) butter, softened
1 cup powdered sugar
1 egg
1 tsp. almond extract
1 tsp. vanilla extract
2 2/3 cups all-purpose flour
1 tsp. baking powder
1 tsp. salt
3/4 cup whole blanched almonds
Red decorator icing


Instructions:
In a large mixing bowl, beat together butter, sugar, egg, almond extract and vanilla. Beat in flour, baking powder and salt. Cover and refrigerate for 30 minutes.

Working with one quarter of dough at a time and keeping remainder refrigerated, roll heaping teaspoons of dough into finger shape for each cookie (the dough will seem extremely flaky and hard to work with). Place almond firmly into one end of cookie to form a nail and squeeze in centre to create a knuckle shape.

Place fingers on lightly greased baking sheet and bake in 325 degree F/160 degree C oven for 20-25 minutes or until pale golden. Let cool for 3 minutes. Lift up almond, sqeeze red decorator gel onto nail bed and press almond back into place, so gel oozes out from underneath. You can also make slashes in the finger and fill them with "Blood". Remove from baking sheets and let cool on racks. Repeat with remaing dough.

Makes about 30-60 cookies.
