Clear Lemon Sauce

Servings: Makes about 1 1/2 to 2 cups

My family loves to make lemon cakes, filled with clear lemon sauce. This lemon filling is very tart, lemony, and heavenly delicious! This filling can be used for anything. Filling cream puffs with this sauce is perfect too!


Ingredients:
1 cup granulated sugar
4 tablespoons cornstarch
1/2 teaspoon salt
1 cup water
2 tablespoons grated lemon rind
1/2 cup lemon juice
2 tablespoons (1/4 stick/1 oz./28g) butter


Instructions:
In medium saucepan combine sugar, cornstarch, salt and water. Bring to a rolling boil. Boil 1 minute stirring constantly. The sauce will become clear and thick. Take off heat; add lemon rind, lemon juice and butter. Stir well until the sauce is well combined. Let cool for an hour or so, and then chill.

Makes about 1 1/2 to 2 cups.
