2 eggs, beaten
1/2 cup oil
1 tbsp. water
2 1/2 cups all-purpose flour (add more, if needed)
1/2 cup granulated sugar
Juice from 1/2 orange
2 teaspoons baking powder
Choice of Fillings for Hamantashen:
Prune, Poppy Seed, Apricot, Cherry, Strawberry or Raspberry
Fillings may be purchased at the supermarket in the baking section. Look for Solo Brand fillings. They make prune, apricot, cherry, strawberry, raspberry and poppy seed fillings. Or you may use regular jarred jam, jelly or preserves instead.
Preheat oven to 350 degrees F/180 degrees C. Lightly grease cookie sheets.
Mix together all ingredients and knead dough until it forms a ball. Roll out thin (about 1/8 of an inch thick) on a lightly floured board. Using a 3-inch round cookie cutter or the top of a drinking glass cut dough into 3-inch rounds. Fill each round with a generous teaspoon of filling, such as jelly or jam preserves or canned filling. Draw three sides of the dough round together towards the center. Grasp with your fingers and pull inward. You should now have a three cornered or triangular shaped cookie. Place on prepared cookie sheets in preheated 350 degree F/180 degree C oven for 20-30 minutes. Check for doneness after 20 minutes. The cookies should be a light golden color.
Makes approximately 2 1/2 to 3 dozen cookies.
