Cookies & Cream Cheesecake

I am THE Oreo fan...and this cheesecake simply blows me away!

250g chocolate cookies or chocolate wafers
100g (3 1/2 oz.) melted butter
2 tsp. gelatine
60ml (1/4 cup) hot water
375g cream cheese, softened
300ml heavy or double cream, whipped
110g (1/2 cup) sugar
1 tsp. vanilla extract
180g white chocolate, melted
150g Oreo cookies, crushed
50g dark chocolate, melted

Crush chocolate cookies (or wafers) and mix with the melted butter. Spoon into a 23cm (9-inch) springform tin and press firmly into the base and up the sides of tin. Refrigerate for 20 minutes.

Melt the gelatine in the hot water and set aside to cool for 5 minutes.

Process the cream cheese, sugar, vanilla, gelatine and melted white chocolate in a food processor.

Spoon mixture into a mixing bowl. Add softened whipped cream and crushed oreo cookies. Pour the filling over the top of the chocolate cookie base. Refrigerate for at least 3 hours. Drizzle the melted dark chocolate with a fork over the top of the cheesecake.

Makes 12 servings.
