These banana fritters originate from Indonesia and are very popular in Southeast Asia. Use only ripe bananas.

1 cup plain flour (all-purpose flour)
1/2 cup rice flour (no substitutions please)
4 ripe bananas
1/4 cup castor sugar (granulated sugar)
2 tsp. baking powder
oil for deep frying

Instructions:
1. Sift all purpose flour, rice flour, baking powder, and salt into a bowl. Add water to make a smooth coating batter. Mix well.

2. Peel bananas, cut each banana into 2 lengthwise then cut each piece into 2 crosswise. Dip them into batter.

3. Heat oil in a wok or deep fryer to 375 degrees F (190 C). Deep fry the batter-coated bananas until crisp and golden brown. Drain on a paper towel. Sprinkle powdered sugar on the bananas and serve hot.
