Apple Dapple Cake

This is one of the cakes that mother made during the Thanksgiving and Christmas Holidays. Now that she is gone I will keep up the tradition.


Ingredients:
For the Cake:
3 eggs
1 1/4 cups vegetable oil
2 cups granulated (white) sugar
2 tsp. vanilla extract
3 cups sifted (plain) all-purpose flour
1 tsp. salt
1 tsp. baking soda
1/2 to 1 1/2 cups chopped nuts
3 cups diced Red Delicious apples

For the Topping:
1 cup packed brown sugar
1 stick (4 oz./1/2 cup) Oleo (not butter)
1/4 cup sweet milk


Instructions:
Preheat oven to 350 degrees F (180 C). Grease and flour a 10-inch tube pan.

Mix and beat together oil, eggs, sugar and vanilla. Combine flour, salt and baking soda. Fold chopped nuts and diced apples into flour mixture. Pour flour mixture into the oil mixture and mix gently.

Pour batter into prepared pan and bake in preheated 350 degree F (180 C) oven for 1 1/4 to 1 3/4 hours, or until cake tests done.

To Make Topping:
Cook the brown sugar, Oleo and milk for 3 minutes (no longer). Pour hot mixture over the hot cake, still in tube pan. Let cake remain in the tube pan for 2 hours. Remove and turn right side up.

Tip:
This cake can be made ahead of time and frozen until you need it.

Makes 12-15 servings.
