Mom's Butter Pecan Cake

This cake is very tasty and will melt in your mouth. You can serve this with butter pecan ice cream or cool whip.


Ingredients:
For Cake:
1 box Butter Pecan Cake Mix
1 package (3 3/4 ounces) Butter Pecan Instant Pudding Mix* (see note below)
4 eggs
1/2 cup vegetable oil
3/4 cup water

I have added a Butter Pecan Frosting to this recipe if anyone would like to ice this cake.

Butter Pecan Frosting

1 cup coarsely chopped pecans
1/4 cup butter or margarine
1 container ready-made vanilla frosting


Instructions:
For the Cake:
Mix all ingredients with electric mixer. Pour into greased 10-inch tube pan. Bake at 325 degrees F (160 C) for 45-60 minutes, or until a cake tester inserted into the center of cake comes out clean.

Makes 15 servings.

For Butter Pecan Frosting (optional)

Instructions
Place 1 cup coarsely chopped pecans and butter in skillet. Cook on medium heat, stirring until pecans are toasted. Combine nut mixture and ready-made frosting in small bowl. Cool until spreading consistency. Frost cake.

*Note from Diana's Desserts
I am told that the company that made Instant Butter Pecan Pudding Mix, Jello, has discontinued the product. My suggestion would be to use Vanilla Instant Pudding Mix in place of the Butter Pecan.
