Katie Bars

I started making these bars a couple of years ago. The reason I call them "Katie Bars" is because my baby sister Katie begs me to make these all the time. They are really a devils food crust with a raspberry glaze, a creamy vanilla filling, and a drizzling of semi-sweet chocolate.


Ingredients:
Base:
1 box Devil's Food cake mix
1/3 cup butter, softened
1 egg

Filling:
1 cup seedless raspberry preserves
1 (8 oz.) package cream cheese, softened
1 (12 oz.) package vanilla milk chips

Drizzle:
1/2 cup semi-sweet chocolate chips
2 tablespoons butter


Instructions:
Preheat oven to 350 degrees F (180 C).

Combine base ingredients until crumbly. Press mixture into a 15 x 10 x 1-inch pan which has been sprayed with nonstick spray. Bake 8-12 minutes until it appears dry. Immediately spread warm crust with raspberry preserves. Set aside.

Melt the vanilla milk chips in the microwave; adding a little milk if necessary. Use electric hand mixer to combine melted chips with soft cream cheese until fluffy. Spread over completely cooled and glazed crust.

For Drizzling:
Combine the 2 tbsp. of butter with the semi-sweet chocolate chips and melt in the microwave. Drizzle this mixture over the bars. Cool completely and cut into squares.

*Note: I have also prepared this dessert on a pizza stone and sliced into "Pizza" wedges.

Makes 20 bars.
