Jelly Roll

Servings: 10-12
Ingredients:
For Cake:
3 eggs
1 cup granulated sugar
3 tablespoons cold water
1 cup all-purpose flour
1 teaspoon baking powder
1/3 teaspoon salt

For Lemon Sauce:
Grated rind and juice of 1 lemon
1 cup granulated sugar
3 tablepoons all-purpose flour
2 tabelspoons unsalted butter
1/8 teaspoon salt
1 large egg
1 cup hot water

Garnish:
Confectioners' sugar


Instructions:
Preheat oven to 375 degrees F (190 C). Grease a 15 x 10 x 1-inch jelly roll pan and line with wax paper; grease and flour wax paper.

Beat eggs and sugar until thick. Add water. Sift flour, baking powder and salt together; add to egg and sugar mixture.

Spread batter evenly in pan. Bake in preheated 375 degrees F (190 C) oven for 12 to 15 minutes.

Sift confectioners' sugar on a 15 x 10 x 1-inch tea towel.

When cake is done, immediately loosen from sides of pan and turn out onto confectioners' sugar on tea towel. Peel off wax paper. Starting at narrow end, roll up cake and towel together; cool on a wire rack, seam side up. Now make lemon sauce while cake is cooling.

Lemon Sauce:
Place all lemon sauce ingredients in a saucepan on medium heat, and cook until sauce has thickened.

Unroll cake, trim edges and spread with Lemon Sauce. Roll cake up (jelly roll fashion). Place on serving plate, seam side down. Dust jelly roll with confectioners' sugar. When ready to serve, slice jelly roll into individual pieces.

Makes 10-12 servings.
