Cinnamon Coffee Ring

This coffee ring cake does not last long. It's usually eaten up very quickly because it's so moist and tasty.


Ingredients:
1 cup (2 sticks/8 oz./226 grams) butter or margarine, softened
2 3/4 cups granulated sugar, divided
4 eggs
2 teaspoons vanilla extract
3 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
2 cups (16 oz.) sour cream
2 tablespoons ground cinnamon
1/2 cup chopped walnuts


Instructions:
In a mixing bowl, cream butter and 2 cups of the sugar. Add eggs, one at a time, beating well after each addition. Add vanilla; mix well.

Combine the flour, baking powder, baking soda, and salt; add to creamed mixture alternately with sour cream. Spoon 1/3 of the batter into a greased and floured 10-inch tube pan.

Combine the cinnamon, the chopped nuts, and the remaining 3/4 cup sugar together; mix well. Sprinkle 1/3 of this mixture over the batter. Repeat layers 2 more times. Bake at 350 degrees F (180 C) for 65 - 70 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes befor removing from pan to a wire rack.

Makes 10-12 servings.
