A very lovely and beautiful cake, so delicious, and what a perfect cake for Valentines Day. Very special, and so simple to make.
Bake cake as directed on box in two 8-inch round pans. Place cakes on racks and cool completely. After cakes have cooled, invert one layer onto cake plate, spread top of cake with a thin layer of frosting and spread jam on top of frosting, making sure you spread jam about 1/4 to 1/2 inch away from cake's edges. Invert the second cake layer from pan and put on top of first layer carefully. Spread frosting on sides and top of cake.
To Decorate Top of Cake:
Place sliced strawberries on top of cake in a overlaping design starting from the cake's edges and ending up in the center of cake. Place mint sprig in the center of cake.
Serve at room temperature. Keep refrigerated. Enjoy!!
