Potato Oatmeal Muffins

Servings: 18 muffins
Ingredients:
1 cup of rolled oats (instant can also be used)
1 cup milk
2 cups self-rising flour
1 cup granulated sugar
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 cup unsalted butter or margarine
1 teaspoon vanilla extract
2 eggs, lightly beaten
1 1/4 cups mashed potatoes


Instructions:
1. Combine oats and milk in a bowl, set aside. In a large bowl, mix flour, sugar, baking powder, salt, cinnamon and nutmeg.

2. To the oat mixture add melted butter or margarine, eggs, vanilla extract and mashed potatoes. Stir well until mixed.

3. Add the wet ingredients to the dry and mix until just combined.

4. Fill greased muffin pans to 3/4 full and bake in a preheated 375°F (190°C) oven for 20 minutes.

Makes 18 muffins.
