Rosie's Orange Bars

If you like, try these delicious orange bars with a sweet and tangy orange glaze, and then dust tops with confectioners' sugar.


Ingredients:
Crust:
1 cup all-purpose flour
1/2 cup confectioners' sugar
8 tbsp. (1 stick/4 oz./113g) unsalted butter

Filling:
2 large eggs, lightly beaten
1 cup granulated sugar
1 tbsp. all-purpose flour
1/4 cup orange juice
Zest of 1 orange, finely grated

Garnish:
Confectioners' sugar, for dusting top
Orange Glaze (see recipe below) optional

Orange Glaze

1 cup confectioners' sugar
1 tbsp. unsalted butter, softened
2 tbsp. fresh squeezed orange juice


Instructions:
1). Preheat oven to 375 degrees F/190 degrees C). Lightly butter an 8-inch square baking pan.

2). Crust:
In a bowl, combine the flour and confectioners' sugar. Cut in the butter until it is absorbed. Press the mixture into the prepared pan and bake for 20 minutes.

3). Filling:
In a bowl, beat together all the ingredients. Pour the mixture over the baked crust. Return the pan to the oven and bake for 20-25 minutes, or until the filling is set.

4). Cool on a rack, then chill. Before serving, dust the top with confectioners' sugar.

5). If desired, while still hot, thinly spread with Orange Glaze (optional). Cool, and cut into 8 or 9 squares or bars.

To Make Orange Glaze:
In bowl, gradually blend a small amount of sugar into softened butter. Add orange juice and remaining sugar; stir to blend well. Spread over hot orange bars; cool; and cut into 8 or 9 squares or bars. Top with confectioners' sugar.

Makes 8-9 bars.
