Apple-Cinnamon Cake

What a lovely cake to make during the cooler months. So comforting on a crisp autumn or winter's day. Use apples that are sweet, but have a little bit of tartness to them, such as Golden Delicious or Fuji.


Ingredients:
For the Cake:
5 oz. unsalted butter or margarine, softened
8 oz. self-rising flour
1 tbsp. ground cinnamon
6 oz. granulated sugar
2 baking apples, peeled and finely chopped
1 oz. cream cheese, softened
2 large eggs, beaten
2 oz. walnuts, coasely chopped

For the Frosting:
4 oz. cream cheese, softened
1 1/2 oz. confectioners' sugar


Instructions:
Preheat oven to 325 degrees F (160 C). Grease a 7-inch (18 cm) round cake pan, and line bottom of pan with parchment paper.

For the Cake:
In a large bowl, combine the softened butter (or margarine, is using) with the flour. Mix in the cinnamon, the granulated sugar, the chopped apples, the 1 oz. cream cheese and the eggs. Stir in the chopped walnuts (optional).

Spoon batter into cake pan and bake for 1 to 1 1/4 hours, until top of cake is firm to the touch. Allow to cool for 15 minutes before removing from the pan. Cool cake completely on wire rack before frosting.

For the Frosting
Mix the 4 oz. of softened cream cheese with the confectioners' sugar and spread over top of cooled cake.

Tip:
Cream cheese can be softened quickly in the microwave. Place unwrapped packages of cream cheese in microwavable bowl. Microwave on High 30 to 45 seconds or until slightly softened.

Makes 6-8 servings.
