Buttermilk Biscuits

Servings: Makes 12-18 biscuits
Comments:
An old fashioned favorite that has survived the test of time. They're easy to make and light as a feather. Spread butter and honey over them for the best treat in the world.


Ingredients:
2 cups all-purpose flour
2 1/2 tsp. baking powder
1 tsp. salt
1/2 tsp. baking soda
1/2 cup shortening
1 cup buttermilk or sour milk


Instructions:
Preheat oven to 425 degrees F/220 degrees C.

Combine flour, baking powder, salt and baking soda in mixing bowl.

Cut in shortening with pastry blender until mixture resembles coarse meal.

Add buttermilk all at once to dry ingredients and stir with fork until a soft dough is formed.

Turn dough out onto lightly floured surface and knead gently 8 to 10 times.

Roll or pat to 3/4-inch (2cm) thickness. Cut with floured 1 3/4-inch (4cm) round cutter. Place on ungreased baking sheet close together for soft-sided biscuits or about 1-inch (2.5cm) apart for crusty-sided biscuits.

Bake in preheated oven for 12-15 minutes or until light golden. Serve warm with butter and honey on the side.

Makes 12-18 biscuits, depending on what size cutter you use.
