1 pint whole milk, or 1 pint almond milk
2 Tbl. sugar
2 Tbl. cornstarch
1/4 tsp. salt
1 cup heavy whipping cream, whipped
1 cup raspberries (pureed and strained though seive to remove seeds)
1 cup canned crushed pineapple, drained
1/2 cup ground blanched almonds, optional
Canned Pineapple slices
Heat milk, sugar, salt, and lemon rind to scalding, add cornstarch dissolved in a little cold milk and cook ten
minutes. Remove lemon rind and add the mixture to pureed raspberries and crushed pineapple. Fold in whipped cream.
Stir in ground almonds (if using). Mold and chill. Garnish with whipped cream, whole raspberries and pineapple slices.
