Mint Chocolate Chip Ice Cream Pie

Servings: Makes 1 (9-inch) ice cream pie, 8 servings
This is the ultimate chocolate mint lover's frozen dessert. Easy to make and you can enjoy this creamy pie after only 6 hours of freezing.

24 (2 cups) chocolate wafer cookies, crushed
1/3 cup butter, melted
1 quart (4 cups) mint chocolate chip ice cream, slightly softened

Chocolate-flavored syrup
Heavy whipping cream, whipped, sweetened, if desired

Stir together crushed cookies and butter in medium bowl. Press on bottom and up sides of 9-inch pie pan. Freeze until firm (10 minutes).

Spread ice cream over crust. Cover; freeze until firm (6 hours or overnight).

Just before serving, drizzle pie with chocolate syrup. Garnish with sweetened whipped cream, if desired.
