Mimosa Fruit Mold

Ingredients:
1-1/2 cups boiling water
1 6 oz. pkg. sparkling mandarin orange flavor or two 3 oz. pkgs. sugar free low calorie gelatin
2 cups cold club soda, seltzer, Diet 7-up or Diet Gingerale
1 can (11 oz.) mandarin orange segments, drained
1/2 cup sliced strawberries
1/2 cup canned sliced peaches, drained


Garnish: Optional
Frozen non-dairy whipped topping, thawed


Instructions:
Stir boiling water into gelatin in large bowl at least 2 minutes until
completely dissolved. Refrigerate 15 minutes. Gently stir in cold club
soda. Refrigerate about 30 minutes or until slightly thickened
(consistency of unbeaten egg whites). Gently stir for 15 seconds. Stir in oranges, peaches and strawberries. Pour into 6-cup mold. Cover.

Refrigerate 4 hours or until firm. Unmold. Store leftover gelatin mold in refrigerator. Serve with thawed non-dairy whipped topping, such as CoolWhip.
Serves 10-12.
