Ingredients:
2 cups grated zucchini
Egg substitute, equivalent to 3 eggs
3/4 cup applesauce
1 cup refined sugar
2 teaspoons pure vanilla extract
3 cups unbleached all-purpose flour
1 tablespoon baking soda
1 tablespoon ground cinnamon
2 teaspoons ground nutmeg
1 teaspoon baking powder
1/2 cup walnuts, coarsely chopped (optional
1/2 cup raisins (optional)
Instructions:
Preheat oven to 350 degrees F/180 degrees C. Generously grease two 8 x 4-inch loaf pans with margarine. Line with parchment paper, and grease parchment paper also.
In a large mixing bowl, combine first five ingredients together. Add dry ingredients, and stir well. Add chopped nuts or raisins (or both), if using. Pour batter into prepared loaf pans and bake in preheated oven for 50-60 minutes, or until a toothpick inserted in bread comes out clean. Cool in pans for 10 minutes, then loosen sides of pans with knife and invert bread onto cooling rack. Let bread cool completely before slicing. Serve slightly warm or at room temperature.
Makes 2 loaves.
