1. In small electric mixer bowl, combine pudding and milk. Mix on low speed until thickened, about 2 minutes. Chill until set, about 5 minutes.
2. Fold in whipped cream or topping. Spread 1/3 cup pudding mixture on 8 graham crackers.
3. Top with remaining graham crackers and wrap sandwiches individually in plastic wrap. Freeze until firm.
Makes 8 servings.
