Puffed Baked Apple Pancake

Makes this apple pancake treat for a special breakfast for your family, or serve it to visiting friends or family. They will love it.


Ingredients:
1/4 cup (1/2 stick) unsalted butter
3 large eggs
3/4 cup all-purpose flour
3/4 cup milk
1 apple (Golden Delicious apples are good), peeled, cored and cut into thin slices
1/4 cup brown sugar
1/2 teaspoon ground cinnamon
2 tablespoons fresh lemon juice


Instructions:
Preheat oven to 425°F (220°C). Cut apple into thin slices and toss slices with brown sugar, cinnamon and lemon juice.

Melt butter in a large ovenproof frying pan, wok, or paella pan until the butter is just melted (3-4 minutes.).

In a blender or food processor, blend the eggs, milk and flour at high speed until smooth and well blended. Pour the batter into the pan of melted butter. Arrange the apple slices in a spoke-like pattern in the center. Bake for 15-20 minutes or until puffed and golden brown. Serve immediately with maple syrup.

(Variation: omit apples; serve pancake with fresh berries or other fresh fruit or with powdered sugar and lemon juice.)

Makes: 4-6 servings.
