Berries and Mascarpone

Servings: 2
Ingredients:
6 oz. mascarpone cheese
1 oz. confectioners' sugar
2 tbsp. whipping cream
4 oz. raspberries, or combination of other types of berries (such as strawberries, blueberries, blackberries, boysenberries, raspberries, etc.)
Brandy, to taste

For Garnish:
Cookies, sweet biscuits, or ladyfingers
(optional)


Instructions:
Whip the cream until it just holds its shape. Fold the whipped cream into the mascarpone cheese and mix in the confectioners' sugar. Stir in a little brandy (about, 1 tbsp.) and check the taste. Add a little more brandy if desired. Put into two pretty serving dishes and chill for a couple of hours. Sprinkle berries with a little confectioners' sugar. Just before serving divide berries between two dishes and pile them on top of the mascarpone mixture. Decorate with mint leaves dipped in a little egg white and then confectioners' sugar. If desired, for garnish place 2 cookies or sweet biscuits such as ladyfingers (standing up as in photo) into each dessert.

Makes 2 servings.
