Apple Walnut Cobbler

A very warming dessert for a cool, brisk autumn evening. Serve with a scoop of vanilla ice cream.


Ingredients:
5 cups thinly sliced, peeled tart apples (such as Cortland, Granny Smith, Jonathan, or Rome Beauty)
3/4 cup chopped walnuts
1/4 cup sugar
1/2 tsp. ground cinnamon
1 cup all-purpose flour
1/2 cup sugar
1 tsp. baking powder
1 beaten egg
1/2 cup evaporated milk
1/3 cup margarine or butter, melted
Half-and-half or light cream (optional)


Instructions:
Lightly grease a 2-quart square baking dish. Spread the apples in the dish. Sprinkle with 1/2 cup of the walnuts, the 1/4 cup sugar, and the cinnamon. In a medium mixing bowl stir together flour, the 1/2 cup sugar, and the baking powder.

In a small bowl combine egg, evaporated milk, and melted margarine. Stir the egg mixture into the dry ingredients until smooth. Pour evenly over apples; sprinkle with remaining walnuts.

Bake in a 325°F (160°C) oven for 50 to 55 minutes or until a wooden toothpick inserted in the center comes out clean. Cut into squares and serve warm. If desired, serve with a scoop of vanilla ice cream.

Makes 9 servings.
